Classic Macaroni Salad
INGREDIENTS
4 cups uncooked elbow macaroni
1 cup mayonnaise
1/4 cup distilled white vinegar
2/3 cup white sugar
2 1/2 tablespoons prepared yellow mustard
1 1/2 teaspoons salt
1/2 teaspoon ground black pepper
1 large onion, chopped
2 stalks celery, chopped
1 green bell pepper, seeded and chopped
1/4 cup grated carrot (optional)
2 tablespoons chopped pimento peppers (optional)
Bring a large pot of lightly salted water to a boil. Add the macaroni, and cook until tender, about 8 minutes. Rinse under cold water and drain.
In a large bowl, mix together the mayonnaise, vinegar, sugar, mustard, salt and pepper. Stir in the onion, celery, green pepper, carrot, pimentos and macaroni. Refrigerate for at least 4 hours before serving, but preferably overnight.

Classic Potato Salad
2 pounds red boiling potatoes, scrubbed
2 tablespoons red wine vinegar
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
3 hard-cooked eggs
1 small celery stalk
1/4 cup chopped sweet pickle (not relish)
3 scallions
2 tablespoons chopped fresh parsley
1/2 cup mayonnaise
2 tablespoons Dijon-style mustard
Place potatoes in a pot with water to cover. Bring to a boil, cover and simmer, stirring to ensure even cooking, until a thin-bladed paring knife or a metal skewer inserted into a potato can be removed with no resistance, 25 to 30 minutes. Drain, rinse under cold water and drain again. Cool slightly.
Cut warm potatoes into 3/4-inch dice with a serrated knife. Layer them in a bowl, seasoning with vinegar, salt and pepper as you go. Cut eggs, celery and pickle in 1/4-inch dice and thinly slice scallions. Add to potatoes, along with parsley. Stir in mayonnaise and mustard until everything is combined. Chill, covered, before serving.

Anyone have any recipes for potato salad, I want to use russet potatoes, not new potatoes or red ones. I'm pretty good at cooking, but for some reason I have never attempted to cook this, probably cause it's my favorite and I'm worried I'll screw it up. We're going to the fair this weekend and I'd like to take some with us. Thanks.
Cook the potatoes till done with the skins on then put them in cold water to chill them and take the skins off.
If you peel them first I would cook them in the microwave with just a little water on the bottom of the bowl.
If using 6 potatoes:
3 or4 hard boiled eggs, cooled and chopped
mix up about 1 cup of mayonnaise
2 stalks of celery chopped
some chopped onion, to taste
2 tablespoons of mustard
salt and pepper to taste
Mix this mayo mixture into the potatoes, add more mayo if needed to make it creamy.
This is my favorite recipe for potato salad.
You could use miracle whip instead of mayo if you like it but no one in my family likes it.
Sometimes I leave out the onions.
You can put it in a bowl and slice up some hard boiled eggs on top and put on some parsley sprigs if you want to make it fancy.
Keep it refrigerated.

This is my mother's (& now my) recipe. The recipe is over 50 years old & still one of our family favorites. A summer holiday was / is not complete without it. Enjoy!
MOM’S POTATO SALAD
Note: the following amounts are approximates, Mom never measured for this recipe. I always “mix & taste” until I get it like we like it. Also, the measurements are obviously in amounts for a large get-together, but is easily reduced for smaller gatherings. It's even better after the first 24 hours of chilling in the fridge.
10 lb. potatoes, peeled, quartered
1 pint dill pickles, chopped
1 doz. eggs, boiled, peeled, chopped
1/2 to 1 large onion, diced
1 to 3 T. prepared mustard
1 pint to 1 qt. Miracle Whip (do not substitute another brand)
salt, to taste
Boil prepared potatoes until tender, then mash while hot. We seem to like the potato salad better when the potatoes are mashed by hand instead of with an electric mixer; has a better texture. Place in large container, add prepared hard-boiled eggs on top of potatoes. Cover & refrigerate until cool. When the potatoes & eggs are completely cooled, add the prepared dill pickles, onions, & salt (NO pepper). Add the small amount of prepared mustard (this is only for color, not for taste). Add Miracle Whip a little at a time.
Note: you must use Miracle Whip. Mix & taste until it suits your taste. Tip: This is a good excuse to eat more than your fair share. But remember, the taste will change as the flavors of all the ingredients mingle while chilling. After mixing ingredients to your desired taste, cover, & refrigerate. Flavor is best if refrigerated at least 24 hours before serving.

2 very large baking potatoes
1 8oz. sour cream
3 T mayonnaise
squirt yellow mustard
green onion
bacon bits (I prefer real bacon)
celery
Cajun seasoning to taste (Tony Chachere's)
paprika
Boil potatoes until soft but not mushy. Drain WELL. Add the mayo, mustard and 1/2 of the sour cream to the hot potatoes. Chill. When almost cold add the rest of the ingredients and the rest of the sour cream if the salad is dry. Sprinkle with paprika.

Ingredients
5 medium potatoes
4 large eggs
1/2 cup mount olive dill pickle cubes
2 cups Kraft mayonnaise
Directions
1) Peel and dice potatoes.
2) You can also cook them whole it you like.
3) Then cut them up.
4) Boil eggs and dice up with your egg cutter.
5) Drain out most of the juice of the dill cubes.
6) Add mayonnaise.
7) Salt and pepper to your taste.
Fold to mix.
You can always add a bit of yellow mustard to it too, it adds a little spice and color. You could even leave out the egg, if you don't feel like hard boiling any. This is about as easy as it gets, and still tastes awesome.
